Now that fall is approaching, I was in the mood to break out my crockpot and make some comfort food. I have never made chicken tacos like this before, it was an experiment...and they came out amazing! Not to mention, extremely easy to prepare. Here is what you will need:
1 lb boneless chicken breasts
1 lb boneless skinless chicken thighs, cut off any visible fat
I -1.5 containers of GOOD salsa, not the crap in the jar. I used Lucky Habanero Salsa Private Reserve, which can be found at Sprouts.
Salt & Pepper
*I rarely measure out my seasonings, I just sprinkle away. I went heavy on the Coriander, Chili Powder, and Cumin...used about 1/2 tsp of garlic, and a dash of cayenne.
Salt & Pepper to taste.
Place chicken in the crockpot, spread out evenly. Liberally season with all except the cilantro. I just made sure I coated everything evenly. Top with the salsa, and set on Low for 5 hours. Remove chicken, shred with a fork, and return to the pot. Add fresh cilantro, I used about a handful...and cook for an additional hour. If it looks like it needs more moisture, add more salsa or a little water. Serve with Corn Tortillas. I normally add toppings to my tacos, and feel free to add anything you wish. HOWEVER, these were so delicious we realized toppings would take away from the yumminess! Let me know how you liked them!
